Observation: - Dishwashing machine measured 56C at the final rinse cycle.
Corrective Action(s): - Repair the dishwasher, the temperature should be 71 C or above at the plate level by the final rinse cycle.
- Wash, rinse, sanitize the bakery ware and baking tools in the 3-compartment sink until the dishware get fixed.

Routine health inspection conducted with the presence of ASM.

- Hand sinks fully equipped with hand soap, paper towel, hot/cold running water.
- All coolers at 4 C or below.
- Freezers satisfactory.
- Quats sanitizer available at 200 ppm in spray bottles and dispensing units.
- Ware washing sinks ready for cleaning, rinsing and sanitizing process. * please repair the dishwasher in BK department*.
- Tongs available in each dish container and handles not contaminating food.
- No signs of pest activity observed.

Note: (1) remind staff washing their hands whenever hands are contaminated.
(2) clean the lighting shatterproof cover and the fan guards in the walk in cooler.
