Observation (CORRECTED DURING INSPECTION): Dough was covered in a garbage bag.
Corrective Action(s): Discontinue the practice of using garbage bags to cover foods. Garbage bags are not considered food grade materials. Dough was discarded at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Bleach was too strong - test strip bleach out. This is a continued violation.
Corrective Action(s): Excessive levels of bleach may be toxic. Bleach must be maintained between 100ppm to 200ppm. To prepare 100ppm to 200ppm bleach, add 1/2 teaspoon bleach per litre of water. Bleach was diluted to 200ppm at the time of inspection.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: Kitchen staff and staff member in the front did not have their valid FOODSAFE Level 1. Staff member at the front registered for FOODSAFE Level 1 equivalent and did not complete the course.
Corrective Action(s): While the operator is absent, at least one person must have FOODSAFE Level 1 or equivalent training. Operator has FOODSAFE Level 1 and cannot leave the facility during hours or operation, unless another person with valid FOODSAFE Level 1 or equivalent training is present. Two staff members are registered for FOODSAFE Level 1 on June 6, 2022 and the chef is registered for June 21, 2022. Staff must provide temporary confirmation of successful completion of FOODSAFE Level 1 by June 7, 2022.

Comments

-Follow-up inspection to April 29, 2022.
-Hot potentially hazardous foods are cooled in the walk-in cooler for 5-6 hours, then moved into the walk-in cooler for rapid cooling. Sauces were between 2C to 4C. Continue rapidly cooling foods using the walk-in freezer and walk-in cooler.
-Did not observe staff practicing poor hand hygiene practices at the time of inspection.
