Observation: Fired onion in insert (display cooler near the end) temp 12 oC - other inserts temp was elevated.
Correction: Discard any PHF with temp >4oC for >2 hrs (all) immediately.
Comments

Noted issues are being addressed. Glass washer is fully fixed even distribution of sanitizer 50 ppm

The following still outstanding:

* Deep cleaning is scheduled
* Line cooler temp is fine-** top inserts temp is bit high random check ensure to have just 1/2 (PHF) and supplement with Ice during BH due to being open and close to the cooking grills
* Install a splash guard between hand wash sink and prep area.
