Observation: Live rodent was found in a tin cat by the walk-in cooler.
Corrective Action(s): Pest activity has decreased since the previous inspection. Facility currently has professional pest control servicing the facility - continue to monitor for pests activity and carry out corrective actions as needed.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Rodent droppings were found in the bakery shelving area.
Corrective Action(s): Staff continue to checked for rodent droppings and clean and sanitize affected areas on a daily basis. Ensure staff continue to monitor for pest activity and sanitize all work surfaces prior to working on a daily basis.

Observation: Deli spray bottle was unlabelled.
Corrective Action(s): Ensure all chemicals are properly labelled to identify their contents to prevent accidental mixing and/or misuse of chemicals. Ensure containers are checked and relabelled as needed.

Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -17C.
-Display coolers were at 4C (3 cooler units).
-Customer area deli coolers were at/or below 4C.
-Hot holding was greater than 60C (food is discarded after 4 hours). Record sheets for hot foods held at 4 hours were not available - record system required if time is used as a food safety tracking system.
-Soup was cooked to greater than 74C prior to hot holding.
-Cooked chicken was cooled rapidly to less than 4C.
-High temperature dishwasher had a final rinse temperature of 71C on the dish surface on consecutive cycles (minimum of 71C required for proper sanitizing).
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottle and dispenser were at 200ppm.
-Slicer sanitized after each use and broke down for cleaning and sanitizing every 2 hours. Staff observed sanitizing the slicer after use.
-Foods stored off the ground and in pest resistant containers.
-FOODSAFE Level 1 equivalent valid until May 18, 2028.
