-FS trained staff on duty at time of visit. -Paper towel and liquid soap are provided at hand washing sink, -Sanitizer spray bleach solution 100 ppm, spray bottle is labelled -Dishwasher temp > 74 oC at plate -General sanitation is satisfactory -Foods are properly covered in coolers and freezers -Good personal hygiene noted by staff -Temp log sheet is in place and up to date ( ensure to put the year on top of each sheet) -Permit is posted *** Wiping rags to be stored in bucket of sanitizer after each use ( rinse and store in bucket of sanitizer ) *** Something similar to rodent dropping mixed with some dirt noted under/behind equipment in kitchen and storage area - clean and monitor for any possible activity
