Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (Hot water supply (on demand) is only 14 C at faucet. Dishwasher final sanitizing rinse is less than 71 C measured inside of the machine (56 C). Test strip did not change colour.)

Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)] (The hot water supply varies (was 14 C at faucet but now about 30-33 C).)
Comments

Follow up:
- Hot water (43 C) available at the hand sink - good.
- Commercial dishwasher now has 73 C (>71 C) hot water rinse measured inside of the machine (90 C shown on the gauge).
- Ok to use re-useable plates and utensils for customers.
