Observation (CORRECTED DURING INSPECTION): Sauces and cheeses in salad prep cooler noted at 8.2 C
Corrective Action(s): Ensure potentially hazardous foods are stored at or below 4 C. If PHFs temp are above 4 C for more then 2 hours they must discarded. Sauces and cheese discarded. New inserts of PHFs stored on ice.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Sanitizer buckets noted 100 ppm QUATS and with food debris in them. Time stamp noted 11 am - Over 5 hours ago.
Corrective Action(s): Ensure all sanitizer buckets are maintained at 200 ppm QUATS at all times to allow staff to sanitize surfaces as needed. Sanitizer muse be replenished every 2 hours and or when solution becomes dirty. Recommended to use timers set to 2 hours to remind staff of change.

Observation (CORRECTED DURING INSPECTION): 1. Front handwashing sink has hot & cold water, liquid soap - no paper towel
2. Back handwashing sink blocked by raw chicken on racks at start of inspection
Corrective Action(s): Ensure all handsinks are fully supplied with hot & cold water, liquid soap, paper towel and available for use at all times. Replenish paper towels at front and do not block back hand sink.

Observation: Grill chicken tongs, grill knives, rice scooper, coleslaw scooper stored at room temp for unknown length of time with food debris stuck to them and stored in designated insert.
Corrective Action(s): Ensure all utensils are store in insert for max of 2 hours at room temp or stored <4 C or >60 C. All utensils stored >4 or < 60 C for more then 2 hours must be cleaned and sanitized and put into a sanitary insert. Recommend using ice in inserts to keep inserts at <4 C or in water on flat grill > 60 C to prevent microbial growth. Timers set to 2 hours can assist with replacing utensils after the max 2 hours.

Observation: Mouse droppings noted along floor against wall with shallow shelf holding wine. Droppings behind unfastened wooden baseboard.
Corrective Action(s): Ensure all mouse droppings are cleaned up and continue to monitor for new activity. Pest control onsite - recent visit.

Observation: 1. Ceiling in mid kitchen above side entrance is black with dust debris from vent
2. Hood fans saturated with grease (dripping and thick layer on removable plates) - service noted earlier this month (June 2016)
3. Splatter of grease, spills and food debris along side shelves around grill and vent hood, by knives storage (on wall), chop block, around equipment (under and on walls).
Corrective Action(s): Ensure food premise is maintained in sanitary condition. Required cleaning of the above noted areas and all hard to reach areas regularly. Additional cleaning required for commercial hood fan especially.

Observation: Salad prep cooler noted at 8.2 C. Morning temp recorded at 41 F. Top lid damaged and does not open or close properly.
Corrective Action(s): Ensure all coolers are able to maintain temp <= 4 C. Cooler has been noted to be >4 C in the past. Repair cooler unit. Until cooler is repair all PHFs must be stored in another functioning cooler and or on ice to maintain < 4 C.

Observation: 20 cm x 20 cm white plastic cover taped (clear) to wall covering hole in wall. Wooden base board not fastened to wall.
Corrective Action(s): Ensure all surfaces are properly installed and designed to be smooth, durable and easy to cleanable. Remove tape and cover and repair hole with proper materials and fasten base board to wall to allow for proper cleaning.
