Observation: Hand washing station in kitchen lacked liquid soap. Operator filled up soap dispenser at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Raw food was observed being stored above cooked food. Operator stated that further cooking step will be done for those items. Storage practice for raw and cooked food were discussed with the operator. Some cooked food left uncovered in walk-in cooler. Operator covered food items at the time of inspection. Improving storage practices were discussed. Operator moved all raw foods lower and cooked food above. Food separation is to be practiced at all times.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Grease and soil build up observed on kitchen floor, under equipment and in storage room under shelving. Grease build up observed on walls and splash boards in kitchen near fryer, range and near ice machine on the counters and around mop sink. Affected areas in need of cleaning were discussed.
Corrective Action(s): - Thoroughly wash and clean as discussed. Wipe down clean equipment faces. Wash and sanitize all food contact surfaces.
- Thoroughly clean hard to reach areas under equipment. Ensure to clean grease build ups on the floor.
- Thoroughly clean ice maker, wash and then sanitize ice bin. Ensure there is no build up in or around ice bin inside the machine. Store ice scoop outside in a sanitary container.

Observation: 1- Dish washer door latch broken. Water observed to be spilling out and pool on the floor.
2- Water leak observed from faucet in two-comp sink.
3- Operator did not have an accurate probe thermometer to measure food temperature stored in hot holding unit or cooling units.
4- several lights/ Light bulbs not working in the kitchen. Bulbs are not equipped with shatterproof covers.
Corrective Action(s): 1- Repair or replace dish washer door.
2- Repair the leak from the faucet.
3- Obtain a probe thermometer so that food temperature can be measured accurately.
4- Replace or repair lighting in the kitchen. All bulbs in the food prep area must be equipped with shatterproof covering.

Temperature control
Walk-in cooler is at or below 4C. Under the counter cooler is at 4C or colder. Kimchi stored at the cooler reads at 3C at the time of inspection.
Walk-in freezer is at or below -18C. Chest freezers are at -18C or colder.

Proper Dish washing in two compartment sink were discussed. Wash/rinse and sanitize steps are to be followed.
High-temp dishwasher registered at 74C at the dish surface.
Food safety practices satisfactory.
Sanitizer chlorine available in spray bottles measured at 100-200 ppm concentration. Good!

No obvious sign of pest at this time.
