Corrective Action(s): Seal or paint these shelves. Raw wood can absord moisture which can lead to mould growth and cannot adequately be cleaned.

-bleach water buckets with wiping rags at 200ppm chlorine
-no manual dishwashing at time of inspection
-coolers at 4C or less
-freezers at -18C or less
***soup sold out for the day, reviewed heating and cooling procedures with staff - if a lot of soup is leftover ensure it is cooled using an ice wand/ice bath or placed into another container for cooling in a cooler
***temperature logs reviewed - add cook temp (>74C) and hot hold temp (>60C) four hours later
***keep copies of staff food safety certificates on site
