Observation (CORRECTED DURING INSPECTION): Sanitizer bottles were available for use but there was no chlorine detected in them.
Corrective Action(s): - Please check the concentration of sanitizer (200ppm) at the start of every shift and replace as needed.

Comments

- Temperature of coolers and freezers were adequate.
- Hand sinks were quipped with liquid soap and paper towels.
- >50ppm chlorine noted on dish after dishwasher cycle.
- No signs of pest infestation.

** There is excessive use of cardboard and newspaper and paper products. These are not easily cleanable and hold moisture and grease creating conditions for mold and attracts pests. Paper towels are not food grade and should not be used to cover food. Please remove all paper products that are being use as shelf liners, wall covers, as food covers etc.
