302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Refer to #308; as dishwasher is not woring in good working order; utentils and other items are not being properly cleaned and sanitized.
Corrective Action(s): Required operator to manually wash, rinse, and sanitize all items used in the kitchen. This is a temporary measure until the dishwasher is repaired to good working order. Before the end of the inspeciton, operator was able repair the dishwasher to good working order. Operator must run all items through the dishwasher again before using them.

Observation: Observed items in the walk-in cooler without proper lids. All items should be adequately protected from any source of contamination, including but not limited ot physical contaminants.
Corrective Action(s): Required operator to provide appropriate covers for all items in the walk-in cooler

304 - Premises not free of pests [s. 26(a)]
Observation: Observed droppings throughout the facility, espeically in the dry storage area. Operator indicated that deep cleaning was performed last weekend. Presence of droppings means that there is an active infestation in the premises. Operator has a contract with a pest control company, premises is serviced bi-weekly. Pest control techncian visited during health inspection, discussed with the technician that it is mostly due to sanitation. Regular cleaning was recommended.
Corrective Action(s): Required operator to contact pest control company to provide a report including all details of their findings. Operator may be required to increase the frequency of pest control visit to receive appropriate recommendations. Required operator to thoroughly clean and sanitize the facility regularly and more frequently. Operator is to remove all droppings to monitor the level of activity in the facility.

Observation: Following areas have accumulation of grease and food debris:
1. Under and behind chest freezer by the storage door
2. Under and behind cooking equpment
3. Under and behind prep cooler by cooking area
4. Dry storage area
Corrective Action(s): Required operator to perform thorough cleaning of the whole kitchen. Grease and food debris are greast source of food for pests. Operator must ensure that facility is free of any conditions that allow pests to harbour in the kitchen.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher is not dispensing any sanitizer during sanitizing cycle. Noticed that the chlorine bucket is almost empty and that it seems to haev lost its effectiveness.
Corrective Action(s): Required operator to replace the chlorine bucket to see if it was the sanitizer not being effecfive. If nothing changes after changing the bucket, contact technician immediately to have the dishwasher repaired as soon as possible. Operator replaced the sanitizer bucket; dishwasher is adequately dispensing sanitizer during its cycle now.

-Hand washing stations stocked with liquid soap and paper towel
-Hot and cold running water available at all sinks
-Walk-in cooler at 4 C or lower; under-counter cooler at 4 C or lower; chest freezer at -18 C or lower, stand-up freezer at -18 C or lower
-Observed numerous batches of pre-cooked items at room temperature, when inquired, operator indicated that most items are cooked, cooled at room temperature for less than 30 mins before they go into the walk--in cooler; operator must ensure that time-temperature control is put in place (such as a timer) to adequately cool hot foods.
-No hot holding units at the time of visit
-Observed adequate hand washing by staff
-All staff wearing masks; adequate signs in place by the front entrance to inform customers of COVID-19 protocols.
