Mixer/hopper clean in place with power washer then 200ppm quat sanitizer
Open racks removable - emptied out once/ 1-2 weeks
Cooling racks and tortilla counter wiped down each morning with 200ppm quat sanitizer
Liquid soap and paper towels available at 2 compartment sink and washroom - hot/cold running water available
Hair nets in use, gloves in use by staff at dough stage.
Finished product is manually bagged by staff on site - each staff designated to one task. Good
Storage area clean and organized
No evidence of pests.
Follow up inspection in 1 month to verify repair of hand sink.
