Code 302 noted on Routine inspection # AJON-CBGP3G of Feb-07-2022
Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation:
Debris found underneath meat slicer blade.
Correction:
Clean all hard to reach parts of the meat slicer then use a spray sanitizer to sanitize equipment. To be corrected today.
Comments

Follow-up Inspection:
- Ice scoop stored in a designated plate above ice machine.
- Meat slicer has been cleaned. Ensure to clean and sanitize all parts/areas of the meat slicer after each use.
- Fan cover in walk-in cooler has been cleaned.

In addition to the violations above, the following requires your attention:
- The dishwasher digital gauges read the appropriate minimum temperatures required for adequate washing and sanitizing (i.e. minimum 180F), however it took 7 attempts for the dishwasher's final rinse cycle to reach 71C at the dish level. This was the same issue in the previous inspection.
- Service the dishwasher and ensure the booster is working properly.
- Ensure final rinse cycle temperature of dishwasher reaches at least 82C (180F) prior to putting dishes into the dishwasher for adequate sanitation.
