301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 1. Bowl and dough hook of dough mixer was not cleaned and sanitized after use. Restaurant opened at 4 PM when the food contact surfaces of the dough mixer still had flour present over them. This is a repeat violation.
2. Food press contained food debris over the top component. Blade component was previously detached from it. This is a repeat violation.
3. Inside surfaces of the pizza prep. cooler were not in a clean condition as buildup of grease and food debris was evident.
Corrective Action(s): 1. Operator moved the dough mixer bowl and hook near the 3-compartment sink for manual ware-washing. Make sure the bowl and dough hook is washed, rinsed, sanitized, and air dried prior to the next use. Cleaning frequency should be every 4 hours between use and after final use each day.
2. Make sure the food press is washed, rinsed, sanitized, and air dried every 4 hours between use and after final use each day. Operator had a written sign to remind staff to clean and sanitize it and mentioned that they would ensure the staff member cleans and sanitizes it today.
3. Clean and sanitize the inside walls and ceiling of the pizza prep. cooler to remove the buildup of grease and food debris; Correct today.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Corn starch was uncovered and rodent droppings were observed inside the storage cabinet where it was being kept.
2. Sugar was uncovered in the dry storage area and contained food debris (green peppers) inside it.
3. Chilli flakes were uncovered in a food container.
Corrective Action(s): Operator discarded the corn starch during the inspection in case it may have been subject to contamination from the rodent activity. Make sure all food products are kept covered in storage areas to protect them from contamination. Operator discarded the sugar since it was left uncovered and had wet ingredients inside it. Operator covered the container of chilli flakes.

Observation: Rodent droppings were observed inside the storage cabinet used to store corn starch.
Corrective Action(s): Clean and sanitize the affected area to remove the rodent droppings. Use 1 part bleach with 9 parts water to sanitize this area for at least 20 minutes prior to wiping it with single use paper towels. Correct today. Monitor for signs of recent pest activity, clean and sanitize affected areas immediately, keep food in storage containers covered, keep up with the pest control program, and seal any entry points.

Observation (CORRECTED DURING INSPECTION): Single use containers for the sauces were observed wet and air drying on the drain board at the 3-compartment sink.
Corrective Action(s): Make sure the disposable single-use plastic containers with lids for the sauces are discarded immediately after each use. Do not reuse them since they are not made of durable materials intended for repetitive ware-washing. Operator discarded the single use containers that were on the drain board.

100 ppm chlorine sanitizer was available in a container.
Walk-in-cooler and three other prep. coolers were at or below 4 degrees C and were equipped with thermometers.
Freezers were at or below -18 degrees C.
Hot and cold running water was available at the 3-compartment sink.
Operator with a valid FOODSAFE Level 1 certificate was available on shift.
Pest control program was in place. Invoice dated January 21, 2020 was the most recent from the pest control company.
