Comments

-Currently, a sanitizer solution is being used to hold utensils on the line. Ensure that ice is used to hold utensils in the future. Discussed with staff on site.
All coolers were < 4 C.
Freezers were < -18 C.
Hot held foods were > 60 C.
The dishwasher final rinse cycle had 50 ppm chlorine.
The glasswasher had 12.5 ppm Iodine. Test daily.
No evidence of pests at the time of the inspection. A pest control company is under contract with the restaurant.
General sanitation was satisfactory.
