Observation: 1. Build up of food debris in dry storage areas:
a. behind door of hot water tank room, and
b. on shelving for spice
2. Build up observed in ice machine.
3. Heavy grease build up observed on range hood filters. Staff stated these were cleaned weekly (every Tuesday).

Chemical dishwasher measured 50ppm bleach

Storage:
All food items were stored at least 6" off the floor.
All products were either in original packaging or covered inside coolers.
Storage area was well-organized.
Chemicals and cleaners were stored separate from food preparation areas.
