Observation (CORRECTED DURING INSPECTION): 1) Observation: cloths on food contact surfaces not submerged in a sanitizer solution.
Correction: cloths must be in a sanitizer solution (fully covered) at minimum 100 ppm chlorine. Ensure to change sanitizer solution every 2 hours. Cloths must be submerged in sanitizer to prevent the growth of pathogenic bacteria.
2) Observation: Rice scoooper left in a cup.
Correction: In-use utensils must be maintained in an ice bath and changed every 4 hours or kept under cold running water.

Observation (CORRECTED DURING INSPECTION): Observation: Staff was rinsing a pot of cold noodles by hand and not adquately washing hands after the task.

2) Observation: Foods (raw fish, raw chicken, cut vegetables) in 3-door cooler not covered. Breaded meat in stand-up cooler not covered.
Correction: Cover all foods to prevent contamination.
