Observation: Several areas of the kitchen observed with excessive build up of food debris and are clearly not receiving satisfactory cleaning - either by quality of cleaning or frequency of cleaning. These include:
- Under counter cooler (inside out)
- shelves below work counters
- work/prep counters
- sink surrounds (hand and dish) and backsplashes
Corrective Action(s): Clean up and make sure they are part of regular cleaning schedule.

Comments

Ensure a sani-bucket with sanitizer solution always in place for counter top sanitizing throughout the day (i.e. in between arrangements and spot clean up). Buckets are present but not in use. Two litre buckets with 1 teaspoon with a cloth should last for 2 hours depending on use. Have present at both prep spaces.

Cooling units ok
freezers ok.
Handwash stations stocked, but make sure soap container stays close to handsink.
