Observation (CORRECTED DURING INSPECTION): Prepackaged rice balls (approx 6) stored at room temperature. The operator stated that they are delivered hot and only held at room temperature for two hours before storing inside the cooler at 4C.
Corrective Action(s): The operator stored the rice balls inside the cooler at 4C. If this is the normal procedure, submit an updated Food Safety Plan for the storing of the rice balls. The prepackaged rice balls can only be held at room temperature for max 2hours if initially cooked to > 60C. You must identify the temperature control measures. Ensure that ALL cold items are kept cold at 4C or hot food item at 60C.

Comments

- General sanitation is good.
- Dry storage area has adequate space and wire racks. Most food items stored at min 6inches off the floor. Better organization needed at the back of the room.
- No signs of pest activity. Back door is kept closed.
- Random food items (i.e. prepackaged food) checked for expiration dates, condition of packaging, and any signs of deterioration. All in good conditions.

Temperature control:
- Two upright coolers = 3-4C.
- Display beverage cooler = 4C
- One upright freezer = -17C
- Three display chest freezers at the entrance = -16 to -18C
- Two chest freezers at the cashier station = -15 to -16C
- Thermometers inside all refrigeration units.
