A plumber has been on site to repair the pressure issue - pressure appears to be good, however temperatures are still not reaching 71C internally Remember the digital gage for the rinse temperature shows the manifold or exit temperature, not necessarily the temperature that is reaching the plate surface. Thermolabels that were brought on site much MATCH the colour in order to be a "pass". I recommend using either a yes/no style (usually black dot) thermolabel, or a max/min, waterproof thermometer as discussed on site. First run reached 66C, second run 63C **You must continue to use your manual sanitizing method in the 3 compartment sink (100ppm chlorine then air dry)
