Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1) Sanitizer spray bottle had >>200ppm chlorine solution. Bottle was filled with 200ppm chlorine solution at this time.
2) Low temperature dishwasher did not have a sanitizer solution connected, but instead 2 rinse aids. Chemical was ordered at this time.

Facility is equipped with 2 compartment sink + 1 compartment right adjacent. One of the sinks was filled with 200ppm chlorine at this time for manual dishwashing. No event for tonight. Kitchen is to be used for minor food prep only.

Staff had tried connecting to an old sanitizer bucket with little bit of sanitizer left in the container, but only 10ppm chlorine was achieved at final rinse.
Correction: Ensure to have 100-200ppm chlorine solution available at all times. Prepare the solution by adding 1/2 tsp per 1L of water. Have the sanitizer connected to the dishwasher, prime the tube and run until the minimum level of chlorine (50ppm) is reached at plate level for final rinse.

Follow-up inspection conducted:

-Low temperature dishwasher achieved the minimum required chlorine level (50ppm) at the plate level after final rinse.
-200ppm chlorine solution stored in a labelled spray bottle.
-Back storage area cleaned. Lids are in sanitary condition at this time.
-All handwash stations adequately supplied.
