2. build up of small brown casings observed behind 3 door cooler unit, next to the double doors leading to hallway.

Observation: Large gap in door seal (along the floor) on double doors nearest kitchen entrance. This can be a potential entryway for pests.

Observation: **Repeat infraction** Undercounter cooler of kitchen island measured to be around 9°C. Refrigeration units must hold temperatures of 4°C or less.
Corrective Action(s): 1. remove all perishable (hazardous) food items from unit
2. monitor unit to ensure it can maintain temperatures of 4°C or less
3. if unable to maintain temperatures, contact refrigeration technician to repair/service unit

Kitchen has not been in operation since Nov 2020 due to COVID, expecting to restart kitchen in Aug 2021.
