-Follow-up inspection to January 30, 2019. -Hot potentially hazardous foods are now cooled in single layers on a large tray. Chicken made this morning was probed 4C and less. -General cleaning of door seals and vent hoods have been carried out. Ensure all equipment is maintained in a clean and sanitary condition at all times. -Did not observe any foods stored in opened cans at the time of inspection. -Beverage dispenser drip container is emptied twice a day. -Ingredient scoops were found to be stored in a sanitary manner. *Do not place hot potentially hazardous foods in the top section of the hot holding unit (air temperature at top below 60C and bottom greater than 70C). -Please contact the inspector if you have any questions or concerns.
