Freezers are below -18 degC
There is no hotholding being done onsite. ENSURE PIZZAS ARE COOLED AND PLACED INSIDE THE COOLER. DO NOT STORE PIZZAS AT ROOM TEMPERATURE FOR EXTENDED PERIODS OF TIME.
Front hand sink is fully equipped. PROVIDE PAPER TOWELS IN A DISPENSER AT THE BACK 2-COMPARTMENT SINK.
Dishwasher rinse temperature was 72 degC at plate level
200ppm bleach solution is available for sanitizing. USE 1/2 TSP BLEACH PER LITER OF WATER.
Discussed cloth used for covering dough in the cooler. The cloths are used for this purpose only and are laundered every 2nd day. USE ONLY WHITE SHEETS AS DISCUSSED.
Pest control company is on contract.
