-Follow-up inspection to Jan 18, 2018.
-Upright cooler unit was serviced and was at 4C. Additional refrigeration gas was added to the compressor.
-Hot potentially hazardous foods made the previous night were less than 4C. Cooler unit was defrosted and was able to cool hot foods rapidly.
-Bar coolers in the sushi area ranged from 1C to 4C. Refrigeration units were also defrosted and were able to maintain foods at 4C or less on a consistent basis.
*Ensure bar cooler units are monitored and are defrosted as needed to prevent ice build up by the fan area.
-Vegetable peelers were found to be clean and sanitary. Ensure peelers are presoaked before washing to help remove dried food.
-No frozen foods thawing at room temperature at the time of inspection.
