Coolers are maintained below 4 degC; foods in the inserts at the Poke Station were below 4 degC
Freezers are maintained below -18 degC
White rice temperature was 71 degC; brown rice was at 64 degC; congee was at 74 degC
Handsinks are fully equipped
200ppm Quats is available for sanitizing
Discussed dishwashing procedures. No concerns noted. ENSURE DISHES ARE SOAKED IN THE SANITIZER FOR AT LEAST 2 MINUTES.
Temperature log's being maintained. ENSURE THAT THE POKE STATION TEMPERATURE'S BEING RECORDED AS WELL.
The Supervisor on duty has FS level 1 certification
As per Supervisor, electrical issue at the Poke Station has been addressed and the breaker is no longer tripping.
A pest control company is on contract. No pest issues noted.
Shellfish tags are being kept for up to 3 months.
