Observation (CORRECTED DURING INSPECTION): 10ppm chlorine residual noted during rinse cycle of low temp mechanical dishwasher resulting in inadequate sanitation of food contact surfaces. Operator serviced the dishwasher at the time of inspection and 50ppm chlorine residual detected after multiple runs.
Corrective Action(s): Ensure that all food contact surfaces are properly washed & sanitized. Run all the utensils/food contact surfaces again through working dishwasher.

Follow up inspection conducted to routine inspection (report #TGIL-CHDTSC)

- Operator has been maintaining temperature logs for all the refrigeration units. Good
- 200ppm bleach solution sanitizer pail available in the kitchen.
- Raw meat vs ready to eat food are stored on different shelving units in the walk in cooler.

NOTE - Regularly monitor and service the low temp mechanical dishwasher to ensure adequate sanitation of food contact surfaces.
