- Temperature Control: No concerns noted. Temperature monitoring is being conducted. Temperature logs are to be kept on site for review.
- Manual Dishwashing/wiping cloth storage: (4 Step - Quat Sanitizer)
- No concerns noted. Test strips are on site. Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily. Use test strips to measure the concentration of sanitizer.
- Food Storage: Front prep line: Inserts are to be kept fully filled to prevent air loss. As discussed!
- Sanitary Facilities: Ok.
- Chemical Storage: Ok.
- Staff Hygiene: Discussed.
- Structurally: No bare wood permitted in food service establishments. (ie: shelf - paint/seal)
- Sanitation: Facility is clean and organized. Keep it up!
- Pest Control: Monitoring is required to be conducted. No signs noted this date.
- Garbage, Recycling and Composting Disposal: All items are required to be stored in covered, rodent proof containers.
- Ice Machine: Cleaning and disinfection discussed. Ice scoop is not in good repair. New scoop has been ordered.
- Food Safe Trained staff not on site!
