Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: The high temperature dishwasher was unplugged at the time of inspection. The operator claimed that they are not open for dine-in and are not using the dishwasher. The 2 compartment sink was not set up for ware washing and was full of pans and utensils.
Correction: The dishwasher was turned on at the time of inspection. Operator informed that it would take up to 3 hours to reach the appropriate temperature. Inspector will return to follow-up. Ensure the dishwasher is functional. Ensure the 2-compartment sink is setup for ware washing if the facility is only going to be serving in single-use utensils. Adequate supply of bleach was available on site to set up the 2 compartment sink for sanitiziation. This is a repeat violation. Date to be corrected by: TODAY

Follow-up inspection conducted.

The high temperature dishwasher had been plugged in and warmed up. It achieved 74.4C at the dish surface after the final rinse cycle.
Ensure the dishwasher is being used or is warmed up and ready for use before opening for dine-in. The operator claimed that they are going to continue to be take-out only for the next few months due to the COVID-19 pandemic.
Tape had been removed from one of the cooler handles. Stick-on vinyl sheet had been used to line the handle of the other cooler.
Ensure the shelves in the back are also lined with vinyl or other smooth and easy to clean material.
