Food protected from contamination. Food is from approved sourec and labelled. 2 compartment sink in use. 200 ppm chlorine sanitizer in use. 200 ppm Quat sanitizer in use. Dishwasher final rinse at plate at 79.9C. Hydrogen peroxide7% DIN 024064 for common touch contact surfaces only. Mop sink with backflow preventer in place. Linen launder on site at high temp. w/ bleach. Dry storage satisfactory. Permit posted at front desk.
