Observation (CORRECTED DURING INSPECTION): No soap or paper towel at designated hand sink in kitchen or in front of house.
Corrective Action(s): Ensure all hand sinks are equipped with hot and cold running water, liquid soap and single-use towels.

Observation: 1. Garbage bag used to line proofing dough.
2. Food processed near the dirty dishes instead of in the food prep sink. Raw lamb in colander with meat juices dripping transported across the kitchen without using a tray to line the colander.
3. Knives stored in a dirty condition in a dirty container.
4. Shoes stored on a cardboard box of tamarind in the storage closet.
Corrective Action(s): 1. Only used food grade material for covering/lining/storing food. Correct immediately.
2. Keep food away from dirty dishes; use prep sinks. Use trays to line raw meats to prevent meat juices from dripping everywhere.
3. Wash and sanitize utensils and store them in a clean condition.
4. Do not store shoes on top of food containers/boxes. Keep personal items away from items used for food premises.

Observation (CORRECTED DURING INSPECTION): Fish observed thawing at room temperature in sink.
Corrective Action(s): Ensure an approved thawing method is used: in cooler, in cold water that is changed every 30 minutes or cold running water, or microwave.

Observation: Build-up of food debris noted all throughout premises. Mould noted on baking sheet rack.
Corrective Action(s): Deep clean entire premises so it is visibly clean.

Observation: Doors do not shut fully for the two door prep cooler closes to the dough mixer. Temperature of food items was 4 C or below.
Corrective Action(s): Repair/replace cooler so the doors are able to shut properly. Transfer food to another cooler to prevent food temperature from increasing above 4 C. Correct immediately.

Bleach sanitizer in bucket with cloth available.

**Pooling of water noted in dishwashing area - mop this area and prevent pooling of water.

Unable to fully inspect the storage room as it was very difficult to access. Please organize this room so there is walking space. Ensure no food is stored on the floor and personal items are kept separate.
