Observation: At the time of inspection high temperature dishwasher turned off with drain pipe disconnected. As per owner this is due to the installation of the new in ground grease trap. Plumber is currently sourcing adequate sized piping to re-attach the drain pipe in the next few hours.
Corrective Action(s): Until the high temperature dishwasher is fully operational premise is not restricted to take out containers and single use utensils. Operator has setup the 2 compartment sink for manual warewashing with 100ppm available in the sanitize sink.

Observation (CORRECTED DURING INSPECTION): At the time of inspection hand sink by main cooking line obstructed from use by stacked pots and milk jug left in basin.
