A routine inspection was conducted, the following observations were made:
Bistro Kitchen Observations:
- Coolers 4C or colder; freezers -18C or colder; hot holding units above 60C; thermometers present; and temps recorded daily.
- Quats sanitizer in 3-comp sink, cloth buckets, and spray bottles was 200ppm. Solutions in buckets changed every 2 hours.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Foods stored in food grade containers; covered; labeled; date coded; foods stored in groups; and foods stored 6" off the floor on racks & shelves.
- No expired foods in use or for sale. FIFO rules followed.
- General sanitation level is good. No signs of pests.
- Steritech is contracted to monitor for pests.
- FoodSafe certified (or equivalent course) staff present.
- All equipment and surfaces are in good working order; durable; sealed; and cleanable.
- Discussion of self serve condiments and drink dispensers areas occurred:
signs posted at access points to this area should state users must sanitize their hands first
hand sanitizer units placed adjacent to signs.

Retail Food Store Observations:
- Coolers 4C or colder; freezers -18C or colder; thermometers present; and temps recorded daily.
- Foods stored 6" off the floor on shelves.
- No expired foods for sale. FIFO rules followed.
- General sanitation level is good. No signs of pests.
- All equipment is in good working order.
