Observation: 1) Black debris observed in ice machine. This must be cleaned and sanitized before use.
2) Wiping cloths not stored in sanitizer solution. These must be stored in 100ppm chlorine solution.
3)Dishes and utensils sanitized with 0 ppm chlorine solution. Corrected today.
Correction: 1) Clean and sanitize inside the ice machine to remove all debris
2) Store wiping cloths in 100 ppm chlorine sanitizer solution
3) Wash and sanitize all dishes and utensils when dishwasher is fixed.
