General sanitation satisfactory but required attention at several areas:
1. Floor-wall junctions (under equipment/especially under the prep. table with a can opener);
2. Fan hood must be cleaned as per the schedule on Nov. 16, 2018 - no delay please;
3. Pizza insert cooler (top/ under inserts containers);
4. The shelf with microwave;

Handwashing sinks (front & kitchen) supplied with hot and cold running water, soap and paper towel in wall-mounted dispensers.
Coolers below 4.0C;
Walk-in freezer at -25 C;
Thermometers for cold units - available;
High temperature dishwasher at 74.6 C during final rinse at the dish surface;
Sanitizer solution available in spray bottle and it at 100 ppm of Chlorine concentration;
Food storage practices are satisfactory in dry storage area;
No evidence of pest activity at the time of inspection;
Washroom - clean;fully supplied;

Recommendation:
- Do not wash kitchen equipment outside of the premise/back area;
Note: A sink compartments must be large enough to accommodate immersion of the largest equipment and/or utensils (eg., pans).
- Do not double stack containers with food (uncovered).
- Seal all gaps/cracks/holes around fittings on walls.
- Do not use single use bowls and containers to scoop food from bulk bins.
- Cover all food;
- Do not keep containers with food on the floor when cooking/and then containers are going up on prep. counters.
