Observation (CORRECTED DURING INSPECTION): Dishes were not being sanitized properly; 0 ppm chlorine residual detected at the dish surface after the dishwasher's rinse cycle. Repeat violation.
Corrective Action(s): Sanitizer line was primed at time of inspection. 100 ppm chlorine residual detected at the dish surface after the rinse cycle. As previously discussed, ensure to prime the sanitizer line after each time a new sanitizer bucket is hooked up. Also ensure to check the dishwasher sanitizer concentration on a daily basis at the beginning of each day.
Rewash all dishes through the dishwasher.

- Hand washing sinks were properly supplied
- Quat sanitizer solution available in spray bottles at 200 ppm
- All coolers were measured at 4C or colder
- Freezer measured at -18C
- Food storage practices satisfactory
- General sanitation satisfactory. Equipment stored on clean equipment racks were clean - good.
- Drain fly issue was under control at time of inspection - good. Please continue with deep cleaning efforts!
- Test strips available for dishwasher as well as Quat food contact surface sanitizer. Good. ENSURE TO USE TEST STRIPS FOR DISHWASHER DAILY AS PART OF OPENING DUTIES.
