Observation: * Some non-food stuff was being stored in kitchen and not organized; ensure all storage shelves organized properly (eg. binders, tools, etc) to reduce cross contamination risk
Corrective Action(s): * Keep all non-food stuff stored AWAY from food/food equipment and in organized manner

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: * Build up of grime/debris/oil found under food equipment along wall areas and bases of food equipment including green storage racks in walk-in coolers, etc.; also, under bar cooler line was filthy and requires daily cleaning to maintain sanitary condition; dust and debris from re-grouting tiled areas in kitchen was seen on food equipment, etc., and this is not acceptable-- these areas must be protected during construction or it can lead to contamination of food product;
Corrective Action(s): * Thoroughly clean all green storage racks in walk-in coolers and paint where needed; also, under bar line cooler, cooking line vent hoods, legs/wheels of equipment to be cleaned more thoroughly through out kitchen areas; also, during construction ensure all food removed from areas of construction and ensure all food equipment that is not movable is properly covered to protect from contamination

Observation: * Some areas of tile in kitchens requires re-grouting and operator in process of doing this; continue with re-grouting all areas where grout depleted and seal

* Both glass washer and main dishwasher had final rinses of 50 ppm chlorine residual at plate surfaces
* Cold-holding units were 4'C/40'F or colder
* Freezer units were -18'C or colder
* Hand washing stations equipped with liquid soap and paper towels
* Sanitizer was available at work stations at 200 ppm quaternary ammonium; ensure to change every 1-1.5 hours
* Monitoring records were available for cleaning/temperature checks
* Overall food was covered in storage areas; ensure parsley/cilantro maintained covered once prepped
* Note: some build up of grime/debris found under food equipment (eg. bar cooler line, under sandwich prep tables, vents, etc)
* Note: cleaning/repainting of green racks in walk-in coolers to be done within 1-2 week time frame
* Note: re-grouting of tiled areas has begun where deteriorated and continuing until completion
* Follow up inspection to be done in approximately 2 weeks
