Observation (CORRECTED DURING INSPECTION): Gravy was at 48C in the gravy hot holding unit.
Corrective Action(s): Hot potentially hazardous foods must be maintained at/or above 60C to prevent the growth of pathogens and/or the formation of toxins. Gravy was reheated at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Vegetable dicer was found to have tomato seeds on the blades.
Corrective Action(s): Ensure all equipment is properly washed and sanitized after each use to prevent potential cross contamination. Slicer was washed and sanitized at the time of inspection.

Observation: Both counter top coolers were at 11C.
Corrective Action(s): Service or adjust cooler units to ensure they can maintain 4C or less on a consistent basis. Do not use cooler units until they have been repaired/serviced and are able to maintain 4C.

Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -18C.
-Under counter cooler was at 4C.
-Front service area prep cooler and under counter cooler were both at 4C.
-Dairy/soft serve coolers was at 4C.
-Cake freezers (3 units) ranged between -18C to -22C.
-Driver thru upright freezer was at -10C (defrost cycle).
-Downstairs chest freezers ranged from -15C to -24C (new upright freezer added).
-Customer area freezers were at -18C.
-Temperatures are checked and recorded daily.
-Cleaning and sanitizing carried out in the 3-compartment sink. Quats sanitizer dispenser was at 200ppm.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer pails are changed every 2 hours. Pails were labelled and tested at 200ppm.
-Ice machine was found to be clean and sanitary. Ice machine changed monthly and scoop stored in a sanitary manner.
-Tongs and utensils stored on ice.
-General food storage practices good at the time of inspection. Foods stored off the ground and protected from potential contamination.
-General sanitation satisfactory at the time of inspection.
-Facility serviced by professional pest control operator. No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-FOODSAFE Level 1 equivalence valid until January 19, 2028.
