Observation (CORRECTED DURING INSPECTION): 1) Raw meats stored at room temperature. The internal temperature was measured at -1C.
2) Tray of raw bacon was stored at room temperature. The staff stated that these were just pulled from the cooler and ready to be cooked.
3) Milk and creamer stored at 10C inside the improperly working upright cooler.
Corrective Action(s): 1) The operator stored the raw meats inside the cooler at < 4C.
2) Immediately cook the bacon. You must store all raw meats inside the cooler or freezer.
3) Store the cold food items inside a working cooler.

Observation: The following food items were stored at < 60C for more than 2 hours:
- meat sauce at 50C
- two portions of gravy sauces at 45C and 49C
Corrective Action(s): Discard the food items. Increase the hot holding temperature to min 60C.

Observation (CORRECTED DURING INSPECTION): Frozen raw meats were being thawed at room temperature. The internal temperature was measured at -1C.
Corrective Action(s): The operator stored the meats inside the cooler at < or = 4C. Follow the proper thawing methods:
1) Inside the cooler at < or = 4C,
2) Under cold running water or
3) Inside an ice water bath

Observation: The upright cooler near the serving area was measured at 10C.
Corrective Action(s): Fix or replace the cooler. Call the technician for servicing. Do not store any cold potentially hazardous food items inside this cooler until it holds temperature < or = 4C.

Comments

- General sanitation is satisfactory.
- All other coolers (upright, walk in, undercounter, prep) < or = to 4C
- All freezers (walk in, upright) < or = to -18C
- You must maintain a daily temperature log for all coolers and freezers. Temperature for the improperly working upright cooler (dessert) was missing. Include this starting today.
- All other hotholding units > or = 60C.
- Low temperature dishwasher dispensed 50 ppm chlorine solution at 52C at the plate's level.
- Please obtain chlorine test strips to monitor the dishwasher daily.
- Surface sanitizer available in white buckets with presoaked wiping cloths at 100 ppm chlorine solution. Please have surface sanitizers available at each station (back, front of kitchen, serving area).
- Dry storage area is satisfactory.
- No signs of pest activity.
- FOODSAFE certified staff on duty. Verified at the time of the inspection.
