302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): All of the sanitizer pails and the 3rd compartment sink had 50-150 ppm QUATS solution. Sanitizer test strips were not readily available for use. The staff had to go to the office to look for them.
Corrective Action(s): The dispenser requires about 30 seconds - 1 minute to dispense 200 ppm QUATS. If the buckets are filled too quickly, the sanitizer concentration may not be adequate. The buckets were refilled at the time of inspection. Ensure all food contact counters are wiped down with 200 ppm QUATS. It is recommended that test strips be kept near the dispenser to encourage checking the concentration.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: There was visible build up of grease around the fryers area. The floor was slippery and the grills of the ventilation hoods also had build up of grease. The ventilation hood is due for servicing this month.
Corrective Action(s): Thoroughly clean the ventialtion hood grills and maintain a log for routine sanitation. The floors must be degreased frequently to avoid slippery conditions. Date to be corrected by: April 22, 2022.

Comments

Routine inspection conducted.

Temperatures:
Coolers were maintaining 4 degrees Celsius or less.
Freezers were maintaining less than -18 degrees Celsius.
The hot holding units were maintaining at least 60 degrees Celsius (gravy, corn, mashed potatoes).
Chicken in the hot holding units had an internal temperature of at least 60 degrees Celsius.

NOTE: Temperature logs were not available for review. Ensure temperatures are monitored and documented for the next inspection.

Sanitation:
All hand sinks were stocked with hot and cold running water, liquid soap, and paper towels.
Staff hygiene and food handling practices appeared satisfactory.
3-compartment sink was equipped with plugs.
Sanitizer dispenser dispensed 200 ppm QUATS after running for about 1 minute. *see violation above*
Ice machine was in good sanitary condition. Scoop was stored in a sanitary manner.
Staff was able to describe the processes for sanitation in great detail.

NOTE: Sanitation logs were not available for review. Ensure logs are kept for future reference.

General:
Chemicals were stored in a safe manner under sinks and away from food items.
Washrooms were in satisfactory sanitary condition.
All lights were functional.
Saff had valid Food Safe level 1 certifications or equivalent available on site. Valid until 2026.

Pest Control:
No visible signs of pest activity noted at the time of inspection.
Facility is monitored by a professional pest control company on a weekly basis. Tin cats were empty.

Report discussed with the person in charge and hard copy given on site.
