Observation: Ice machine is not maintained in clean, it was observed to have mold and mildew on sides and walls
Correction: Empty the ice machine, wash to remove all mold and mildew, sanitize and air dry before making fresh ice

Observation: 1. Black organic buildup noted in the interior (top and sides) of the ice machine.
**Note: This is a repeated violation**

2. 0 PPM chlorine residual detected in the chlorine sanitizer bucket below the 3-part sink.
**Operator corrected the issue during the inspection** - sanitizer was discarded and replenshed with fresh bleach and water mixture. 200 PPM chlorine residual tested after the sanitizer was remade.
Please ensure to replace the sanitizer often, replace especially when it gets cloudy or full of organic buildup. Obtain chlorine test strips to check the concentration of chlorine sanitizer to ensure there is adequate amount before use.
Correction: Empty the ice machine, wash, rinse and sanitize all the black organic buildup noted and allow to air dry before use.

Observation: 1. Black organic buildup still noted in the interior of the ice machine.
Note: Ice machine does appear to be cleaner than during the last inspection, however black organic buildup is still noted.

2. Chlorine sanitizer bucket not set-up in the back of house. Multiple in-use wiping cloths noted on the work station in th back of house. Prepare 100 - 200 PPM chlorine sanitizer bucket and place all in-use wiping cloths in the bucket in between use to ensure sanitizer is present when wiping food contact surfaces.
Date to be corrected by: Immediately
Correction: 1. Empty the ice machine, wash, rinse and sanitize all the black organic buildup noted (showed to the operator on-site at the time of inspection) and allow to air dry before use.
2. Prepare a chlorine sanitizer bucket in the back of house. Mix 5 mL of bleach with 2.5 L water to prepare a 100 - 200 PPM chlorine sanitizer.

Ice machine noted in a sanitary condition. No more black organic buildup noted in the interior of the ice machine.
Chlorine sanitizer bucket set-up in the back of house - 100 PPM chlorine residual tested.
Cleanliness of the food premises have greatly improved. Please maintain the facility in a sanitary condition at all time.
Walk-in cleaner, dish machine, 3-part sink and floor areas noted in a sanitary condition.

As per owner, vent hood is pending professional cleaning - to be completed on March 24, 2022.
Cleanliness of the caulking around the 3-part sink has greatly improved. As per owner, the caulking will be redone.

No further follow-up required.
