Observation: In talking with the Deli Manager, it was brought to my attention that the Deli will be undergoing some renovations to accommodate an expanded menu that will include service of hot foods. Plans have not been submitted to our office for approval. This is the second time this has happened, the first being the implementation of the cut fruit program. It is the responsibility of the store manager to ensure that proper approvals are obtained as needed.
Corrective Action(s): Do not start construction until floor plans have been approved by our office. Submit drawings immediately. Provide a copy of the menu items and their food safety procedures as well.
