-Walk-in cooler was at 4C.
-Walk-in freezer was at -18C.
-Cafeteria line coolers were at 4C. Three existing units have been replaced.
-Hot holding was greater than 60C. Foods were cooked to greater than 74C prior to hot holding.
-High temperature dishwasher had a final rinse temperature of 72C on the dish surface on consecutive cycles after 3 cycles (minimum of 71C required for proper sanitizing). Wash temperature is currently at 140F (panel lists the minimum temperature at 150F - recommend adjusting the wash cycle). Ensure students allow utensils and equipment to air dry and not wipe with towels to prevent potential cross contamination.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Ensure students adhere to good hand hygiene practices after using their phones to prevent cross contamination.
-Quats sanitizer spray bottles were at 200ppm. Containers were properly labelled.
-Slicer cleaned and sanitized by the instructors at the end of the teaching day.
-Ice machine was clean and sanitary. Ice scoop stored in a sanitary manner.
-General food storage practices good at the time of inspection. Foods covered and stored off the ground.
-General sanitation good at the time of inspection.
-Kitchen serviced by professional pest control. Minor evidence of pests noted by the washer/dryer - continue to monitor for pest infestation.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 valid until October 31, 2025.
