Observation (CORRECTED DURING INSPECTION): One container of sanitizer measured at 50 to 100 ppm quats. Sanitizer was changed at time of inspection and measured at 200 ppm quats.
Corrective Action(s): Please ensure sanitizer is changed as needed to maintain effective sanitizing concentrations (200 ppm). Test strips are available on site. It is recommended to keep a log to track santiizer change times and concentrations.

Observation (CORRECTED DURING INSPECTION): One can of tomato sauce is badly dented along the seal and is being used to keep the dry storage door open.
Corrective Action(s): Can of tomato sauce discarded at time of inspection as it may potentially be used for food service. The seal may become compromised on dented cans, potentially allowing for the contamination of food.

Observation: Standing water observed below utility sink.
Corrective Action(s): Please have this area re-grouted or tiled to prevent the accumulation of water. Standing water is a potential pest attractant. Date to be corrected by: November 24, 2017.

Routine inspection conducted:

- Walk in cooler at 3 degrees C
- Reach in glass cooler at 2 degrees C
- Small black reach in cooler (dining area) at 4 degrees C
- Domestic refrigerators (second and third floors) at 2 to 3 degrees C. Freezer compartments at -18 to -19 degrees C.
- Walk in freezer at -19 degrees C
- No hot holding at time of inspection. Hot holding temperature records available for review.
- Hand washing stations (kitchen, dining, second and third floors) supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Quaternary ammonium compounds (quats) sanitizer available at 200 ppm in labeled buckets with wiping cloths. *Exception: Refer to Code 302.
- Low temperature dishwasher measured 69 degrees C and 50 to 100 ppm chlorine in rinse residual at utensil surface
- Ice machine maintained in clean condition. Scoop stored safely in clean container.
- Sample of audited nutritional supplements within expiry.
- No evidence of pest activity observed at time of inspection. Staff unable to locate pest control records. Please forward most recent report to inspector.
