304 - Premises not free of pests [s. 26(a)] Observation: Large rodent droppings behind chest freezer and on a sticky trap in dry storage area. One dropping along baseboard. Some droppings appear quite old. Corrective Action(s): Clean up all droppings. Use sanitizer to eliminate smells and trails. Call pest control and install traps for the potential size of rodent. Sticky traps are not as effective. Follow recommendations from pest control. Clean up all spilled flour on shelving and on ground. Clean up any water sources. Date to be completed by: Immediately. Operator said they will clean and call pest control. Operator said it was likely old and the problem was addressed by pest control already. Agreed for follow up inspection within a month. Hand wash sink in kitchen is fully supplied with hot and cold running water, liquid soap and paper towels in dispensers. Coolers top and bottom are all <4C. Other coolers <4C. Freezers <-18C. Condiments and garnishes are kept in coolers <4C, great job. Dishwasher, chlorine, 100ppm. Quat spray bottle and dispenser from wall, >200ppm Quat (400ppm). Dry storage area: everything is stored in covered bins, great job. Washrooms, dining tables and high chairs appear clean.
