Routine check of main kitchen.
Main kitchen supplies food to all serveries/units and does dishwashing for 8 units.
Food Safe Level 1 (or equivalent) - in compliance.
Temperature records are kept. Main kitchen is on back up generator.
Coolers are at 4C (40F) or colder.
Freezers at -18C (0F) or colder with exception of one walk in freezer that is empty and was serviced/repaired - temperature now at -18C).
Reviewed meat slicer use - meat is sliced and reheated.
Supplier notifies of any recalls.
Hot holding cabinet - food at >60C (140F). Steam table empty but is pre-heated when used.
Hand washing stations have hot/cold water, liquid soap, and paper towels in dispensers.
Non-latex disposable gloves available.
Sanitizer - using a sanitizer labelled ok for use on food equipment and food contact surfaces. Test strips available - satisfactory.
Commercial dishwasher has a final hot water sanitizing rinse - 82C (180F) or hotter on gauge and temperature inside reached 71C (160F) - good. Temperature records kept for dishwasher.
Cleaning is satisfactory.
** Clean backsplash caulking behind hand sink (by drink dispenser)
Pest monitoring in place by licenced pest control. No obvious signs of pests.
