Observation (CORRECTED DURING INSPECTION): Concentration of quats sanitizer too low.
Corrective Action(s): Corrected during the inspection. Concentration has been increase to 200ppm. Please continue with daily monitoring and recording

Observation: Temperature of the rinse cycle in the warewashing machine is not reach adequate temperature.
Corrective Action(s): The unit is being serviced. Sanitize manually after washing in the meantime. Temperature dial is broken. Obtain a waterproof, maximum holding thermometer (or thermolabels) to monitor the temperature of the dishwasher. Temperature should reach 71C.

Comments

General sanitation is satisfactory.
Some droppings noted on the floor behind the racking. They may be old. Remove and monitor. Continue with pest control service.
Drawings have been submitted to add pie and cake lines upstairs. They are being reviewed.
Improvements are also planned for the existing production area. Recommend adding a handwashing station in the wash down area and another one at the main production area . Please submit plans prior to renovation.
Gaps are noted on the sides of the dock levelers. Work orders has been submitted to close the gaps with metal strips.
The metal detector was operating correctly and monitoring records was available for review.
Temperature of the refrigeration unit was satisfactory.
Handwashing stations are equipped with soap, paper towels in dispenser and warm water. Daily checks includes monitoring for presence of warm water.
