Observation: Interior of the ice machine was filthy.
Corrective Action(s): Remove ice from the ice machine, clean and sanitize the inside.

Observation: One of the handsinks in the kitchen (close to the ice machine) was blocked by a small desk. It appeared that staff were not using the handsink.
Corrective Action(s): Ensure that all handsinks easy to access. Remove the small desk in front of the handsink.

Observation: Observed staff washing hands with gloves on and not using liquid soap.
Corrective Action(s): Ensure that all staff remove gloves before washing hands. Proper handwashing shall be carried out using hot & cold running water, liquid soap and paper towel. New pair of gloves shall be used after washing hands.

Observation: Observed raw meats stored above fresh vegetables in the walk-in cooler. Potential of cross-contamination from raw meat juice.
Corrective Action(s): Re-arrange the walk-in cooler so that raw meats are stored away from or under produce and/or other food products.

Observation: Pest-proof screen net was hanging at the backdoor, which was not completely covering the bottom.
Corrective Action(s): A proper pest-proof screen door shall be installed.

Observation: Cardboard boxes were used as lining in the shelves in the walk-in cooler. Some were soaked with juice from food products.

Comments

- Ensure to prepare fresh sanitizers (1 teaspoon of bleach per 1 gallon of water) every morning
- High temp. dishwasher achieved sanitizing temperature of 81C at plate's surface
- Temperatures of refrigeration units were adequate
- Monitoring of temperatures of refrigeration units (including walk-in cooler) shall be done by the manager every day. Coolers must maintain temperature at or below 4C and freezers at or below -18C
- Monitoring of chlorine level shall be done using chlorine test strip (100ppm chlorine required)
- Ensure to sanitize the sink after washing raw meats in the food prep sink
- General sanitation was adequate
- No signs of pest infestation at the time of inspection
