201 - Food contaminated or unfit for human consumption [s. 13]
Observation (CORRECTED DURING INSPECTION): Two crates of rotten tomatoes were found in one of the non-functional chest freezers in the back storage.
Corrective Action(s): Operator informed that these must have been forgotten. The rotten food is to be immediately removed from the facility and the freezers are to be thoroughly disinfected prior to being used again.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): There was no sanitizer available in the food preparation area. Staff did not know how to prepare a 200 ppm chlorine residual solution for sanitation. They were using lysol and windex to clean the kitchen. Bleach was available on site.
Corrective Action(s): Inspector showed staff how to make 200 ppm chlorine residual solution for sanitation - 5 mL bleach for 1 L of water. All surfaces are to be sanitized immediately.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): The only hand washing sink in the kitchen was not equipped with paper towels or a functioning garbage bin. The garbage bin could not be opened with the foot pedal and required you to manually open the lid after washing hands.
Corrective Action(s): Operator moved a paper towel roll to the handwashing station. The garbage bin was adjusted so it could half open. Ensure handwashing sinks are equipped with hot and cold running water, liquid soap, and disposable paper towels. The garbage bin should be easily accessible for safe disposal of waste without contaminating the hands.

Observation (CORRECTED DURING INSPECTION): A rag was hanging off of washed trays for drying.
Corrective Action(s): The rag was removed at the time of inspection. The trays were put back into the dishwashing sink. Do not contaminate washed utensils/equipment by putting rags or other items over them.

Observation: A deep fryer with hot oil was found hidden in the back storage area. The facility is NOT approved for frying food items as there are no ventilation hoods present.
Corrective Action(s): Remove the fryer from the facility and safely dispose the oil. Date to be corrected by: today.

Observation: The back storage area contains two chest freezers which are unplugged and not in use.
Corrective Action(s): Remove the items that are not in use by the food premises to facilitate cleaning and sanitation of the facility. Coolers that are turned off allow bacteria to grow within the chambers - causing bad odor and attracting pests. Date to be corrected by: June 14, 2022

Temperatures:
Coolers were maintaining 4 degrees Celsius or less.
Freezers were maintaining less than -18 degrees Celsius.
The hot holding unit at the front was maintaining food at least 60 degrees Celsius.
Rice in rice cookers (3) were held at least 60 degrees Celsius.

Sanitation:
Sanitation requires urgent attention. Deep clean is recommended.
