Observation (CORRECTED DURING INSPECTION): Gravy observed not being properly hot held and not properly reheated before going into hot holding unit. Gravy was reheated to 77C and hot hold unit temperature increased to 68C. Initially gravy was only at 42C

Observation (CORRECTED DURING INSPECTION): 2 trays on the drying rack observed with food debris still affixed. These were removed and rewashed. Ensure staff are properly trained on how to wash and sanitize utensils.
Dishwasher initially only dispensing 0ppm chlorine in the final rinse. Once new chlorine container was inserted and unit primed was final rinse of 100ppm chlorine achieved

Observation: Set up a separate written monitoring log to document both the dishwasher as well as gravy reheating and hot holding to demonstrate you are doing your due diligence. Premises has probe thermometer on site to achieve this. Premises has chlorine test strips onsite to achieve this.

Observation: Front hot holding unit observed with food splatter build up. Clean unit on a regular basis ie daily.

Observation: Have back oven inspected by technician as "gravy function button" is not properly bringing gravy up to proper temperature. Gravy had to be placed back into the oven 3 times before proper reheat temperature was achieved as per premises food safety plan
Substantial ice build up observed on floor inside walk in freezer. Remove ice. Unit may need to be serviced by technician to prevent further ice build up
